Effects of Food and Agriculture Education Instruction in Taitung

This study investigated the effects of food and agriculture education promotion courses with students at Luye Junior High School (in the East Rift Valley) and Zhongxiao Elementary School (in the coastal town of Chenggong) as the subjects and the local special crops of herbs and gac as materials used for instruction. The study analyzed and compared the performance of the students in the three major indexes of knowledge, attitude, and behavior before and after the courses to gain an understanding of the influence produced on the students. Four conclusions were reached: 1) Themed food and agriculture education course content allows greater depth of learning, 2) hands-on learning is an important motivator in food and agriculture education, 3) the courses help foster students’ ability to make proper dietary decisions, and 4) the use of local resources helps with the development of unique courses.
