Leave the organic red pitahaya (dragon fruit) skin on but cut off the scales and both ends as they are inedible. Cut the fruit horizontally into slices of 0.5 – 0.7 cm thick. Bake the slices in a hot air circular oven at 60℃ for 48 hours. The dried fruit will be pleasantly chewy with a moisture content of 3.37% and a water activity level of 0.327. Finally, by way of an embrittlement technique that requires no energy consumption or additives, the slices become crispy with a taste and texture quality that cannot be found in stores.
