1. The first food and agriculture education course themed on the special crops of Taitung: In compliance with the government policy of promoting food and agriculture education, the TTDARES began planning cooperation with Dawang Elementary School in Taimali in 2017 with daylilies as the theme of the course. In 2018, the program was extended to Luye Junior High School (in the East Rift Valley) and Zhongxiao Elementary School (in the coastal town of Chenggong), for which the local special crops of herbs and gac, respectively, were chosen. A total of 145 students and teachers participated, which means 145 families benefited, thus reaching over 1,500 people in the community in a diverse display of food and agriculture education.
2. Experience course on making compost with fallen leaves in creating a campus environment of food and agriculture education and eco-friendliness: To teach students the concept of making good use of environmental resources and turn the campus into a no-waste environment, the TTDARES planned a circular agriculture course on making compost with fallen leaves and completed a lesson plan for reference by schools.

Students at Zhongxiao Elementary School were able to learn in a more localized way with a food and agriculture education course themed on locally grown gac. Hands-on learning is a major aspect of the food and agriculture education courses. Students learn by observing the biotic community on the surface of a leaf compost pile. The students recorded their observations from the leaf compost piles on their worksheets.
